Parmesan Steak Fries

Ingredients
4 baking potatoes
4 egg whites
1 tsp coarse salt
1 1/2 c grated Parmesan cheese
Directions
- Preheat oven to 425.
- Halve each pototo lengthwise, cutting each half into 3 long spears.
- In a wide, shallow bowl or dish, whisk egg whites with salt unti frothy.
- Add potatoes to misture and turn to coat.
- One at a time, lift potatoes from egg (shaking off excess over bowl), and put on a parchment paper-lined baking sheet. Sprinkle with Parmesan cheese until coated.
- Bake until fork-tender and golden brown (about 30 minutes). Sprinkle with salt and pepper to taste.
